My chestnuts arrived yesterday and I couldn’t resist roasting
some last night. I’ve never had such wonderful chestnuts. I cut them the way
you suggest on your web site and roasted them covered, which is something I’ve
never done before. Mom never covered them and I followed her tradition. Along
with the chestnuts being extremely fresh, I believe covering them aids in the
ease of peeling. Since I ordered 5 lbs., I’m now going to share them with
cousins. They are absolutely the best I’ve ever tasted. Thanks a bunch and I
wish you continued success. You will definitely see another order from me next
year.

"For the past 30 years or so I depended on the only chestnuts available in the east: imported Italian chestnuts. I always dreaded the task of preparing them. Although they were large, the meat was contained by a membrane that usually was folded into the meat and required not only peeling, but breaking up and removing the internal membrane. Also, there was about a 5% rejection rate at Thanksgiving due to spoilage. By Christmas, the rejection rate was more like 20%.
The nuts I bought from you are absolutely perfect! There were no rejects. There was no taking the meat apart to remove the membrane and the result was the sweetest nut I've tasted since I was a child in the 1940s. I have, I estimate, about 25% more useable chestnut meat than I can ever remember getting out of a pound.
